Chef Joel & Jenn: Garlic and Lime Shrimp Skewers
After a couple of weeks hiatus, Chef Joel & Jenn are back in the kitchen, cooking up yet another new recipe. After our very successful BBQ Ribs back in early June we've gotten busy. Sure we've been cooking during the week but just have had no time on Sundays to try out new recipes. That was until this past Sunday where we prepared the Garlic and Lime Shrimp Skewers.
In the past couple of weeks I've become more and more interested in a bunch of different food blogs. I use those blogs as my inspiration for what to propose to Jenn for our Sunday Chef Joel & Jenn meals. The Garlic and Lime Skewers was one of the few options that Jenn instantly said yes too which is why it's the first one we did in a while. The recipe comes from SimplyScratch one of the new blogs I follow to get recipe ideas.
After getting the raw shrimp on Sunday afternoon (right after Germany won the World Cup) we started to prepare our meal. The hardest part or at least the part that required the most work was creating the marinade for the shrimp. Take some olive oil, lime zest/juice, cilantro, garlic, and salt/pepper mix them all in a bowl. Dunk the shrimp into the marinade, and put them on skewers. Once your done with that you put them on the grill for ten minutes (five minute a side).




Along with the shrimp skewers we also tried to recreate the wonderful Chipotle rice. As I've mentioned many times Jenn and I are giant fans of Chipotle so when we saw some knock-off recipes for their rice we decided to give it a try. I absolutely loved it but Jenn thought there was too much lime in it. Either way it went perfect with the shrimp skewers.



The meal turned out amazingly. It was one of the best meals we've made so far this year. It was perfect for a nice warm summer evening. The shrimp were flavorful and perfectly cooked. And regardless of what Jenn says I thought the chipotle rice was great. Another wonderful meal for Chef Joel & Jenn.
INGREDIENTS
- 1 Lime, zested
- 3 tablespoon Olive Oil
- 2-3 tablespoons freshly squeezed Lime Juice
- 1 tablespoons Fresh Cilantro, minced
- 1 large Garlic clove, minced
- ¾ tsp Kosher salt
- ¼ tsp freshly ground black pepper
- 32 Fresh ocean caught shrimp, which have been shelled and deveined
- Wooden skewers, soaked in water for at least 30 minutes
DIRECTIONS
- Soak 8 skewers in water for no less than 30 minutes. This will keep the skewers from catching fire once on the grill.
- In a shallow dish combine the zest of one lime with olive oil {STAR Grilling (Garlic) Cuisine Cooking Oil}, lime juice, minced cilantro and garlic, salt and black pepper.
- Toss the cleaned shrimp into the garlic lime marinade and let sit for no longer than 10 minutes, or else the citrus juice will start "cooking" the shrimp.
- Preheat the grill to medium-high. Meanwhile thread 4 shrimp on to each wooden skewer and brush more of the marinade over top.
- Once the grill is pre-heated place the garlic-lime shrimp skewers on to the grill grate. Cook for about 3-4 minutes per side or until fully cooked.
