Chef Joel & Jenn: Skillet Salsa and Cheddar Chicken

We haven't done as many Chef Joel & Jenn's in the last couple of weeks as I'd like too but we did manage one to do a Chef Joel & Jenn during the middle of the week. We are always on the lookout for a recipe that's easy and can be as hands off as possible. This is by far one of the easiest recipes I've ever done that didn't involve the crock pot or sous vide. 

In a nutshell I seasoned a couple of chicken thighs (you can use breasts we prefer thighs) and cooked them in a skillet for a couple of minutes on each side. Once the chicken thighs got a good sear on them I poured some salsa on top of each chicken thigh and put in a 400 degree oven for fifteen minutes. I took the chicken thighs out the oven and then put some cheese on top and put the chicken back in the oven back on broil. 

And that's it dinner was served. I made some rice that we got from Whole Foods and had a dinner ready to go in a half hour. That's what I love about a good simple recipe. The chicken came out incredibly tender and juicy. The one complaint we both had with this recipe that we should have realized before we chose this recipe was that it tasted a lot like our crock pot chicken taco recipe. All things considered though it was a great recipe and one that could absolutely see a spot in our weekly rotation.
