Chef Joel & Jenn: Cheddar, Bacon, and Jalapeño Frittata
And we are back. That's right another Chef Joel & Jenn is ready for your culinary enjoyment. We've started a new plan for our new recipes. We will switch off who gets to choose the new recipe. It can be so hard to choose between the various things we want to cook that it is nice to pick every other new recipe. This weeks choice is Jenn's who immediately flipped past dinner items and went straight for breakfast. She landed on a Cheddar, Bacon, and Jalapeño Frittata.
This may be a knock against my culinary expertise but before last Sunday I had no idea what a Frittata was. Had someone come up to me and said "do you want a frittata" I would have responded with "No thanks I'm not big on desserts." However Jenn educated me that it's actually an egg based breakfast that's sort of like an egg soufflé. The recipe we chose came from the Dinner for Two cookbook.
This may have been the easiest recipe we've ever done for Chef Joel & Jenn. Started out cooking some bacon and dicing the jalapeño put it in a mixture of egg, milk, half and half, and cheese. Throw that all in a pan and put it in the oven for 30 minutes. That's it. I think the entire prep took ten to fifteen minutes. We spent a half hour relaxing on the couch while we let the frittata cook. That's my kind of cooking.
What came out was a fantastic Frittata. Granted I have nothing to compare it to, we both ate every last bite of it. It had a great flavor with just a hint of spice from the jalapeño. I put a little siracha on top and scrapped up every bite of it. We paired the frittata with some hashbrowns we got from Whole Foods. They didn't cook very well and came out a little chewy. That was the only downside to what turned out to be a new favorite in the Szerlip household. Maybe I should let Jenn choose more often?
