Chef Joel & Jenn: Sloppy Joe Mac 'n' Cheese

Unfortunately its been another big gap between Chef Joel & Jenn posts. To say we've both been extremely busy with work and life would be an understatement. The last couple of weeks have had both Jenn and I working many nights and weekends not to mention other obligations. It was nice this past weekend to not only do next to nothing but also take out the old cookbook and try yet another new recipe.

This weeks choice was a rather straightforward one, Sloppy Joe Mac 'n' Cheese. The recipe itself called for about 20-25 minutes of cooking and 5 minutes of prep. I do wonder how they calculate prep time for recipes because it took us closer to 15 minutes to prep the green bell pepper, the onion, and garlic. Not to mention combine all of the ingredients for the sauce. After prepping and making the sauce which contained pasta sauce, tomato paste, brown sugar, Worcestershire sauce, and a couple other ingredients we were ready to go. Jenn cooked the Fusili pasta and I cooked the garlic, onion, and bell pepper followed by the ground beef. This was a total team effort sort of dinner. 

What resulted was one of our favorite recipes yet. Sure it was probably 1000+ calories a plate but it tasted so rich and yet had a nice sweetness to it from the brown sugar. It all came together really nice and made for an extremely filling and satisfying dinner. The concern with trying new recipes for me is always the fear of wasting it and having to go get take-out. Well that didn't happen this week. A great recipe that although it has probably to much prep to make for a weeknight meal, will easily go down as one of our better recipes we've tried in a while.
